The dishes

From North Africa to the tables of Piedmont, the guinea fowl has been a popular bird since ancient times, both for its meat and its eggs. It seems, in fact, that its name derives from the ancient Egyptian civilisation: in all probability, pharaohs and high-ranking officials consumed its delicious meat. Also known as the common Numida or Pharaoh Hen, it is about the size of a pheasant and has a naked head with a red crest and wattles, giving it a very funny appearance. One of its peculiarities is that it is multi-coloured: its feathers are generally dark grey on the upper parts, but it is speckled with white below, becomes lilac on the nape and breast and bluish on the cheeks.

Much appreciated for its lean meat and high protein content, but with a more aromatic flavour than other birds such as chicken or turkey, it is the undisputed star of unforgettable gourmet dishes. Although it is dark in colour, it falls into the category of white meat, making it perfect for dieters as well, given its low fat content. Traditionally, it is best known as "Guinea fowl in the garden", because of its classic combination with the giardiniera sauce, typically used for boiled meats. Accompanied by the crispness and freshness of seasonal vegetables, it is at its best, without being overpowered by overly intense flavours, which would steal the deserved starring role.

A skilful mixture of hard and soft wheat flours, eggs (with a high number of yolks, which gives the characteristic deep yellow colour), and - traditionally - the expert hands of the women of the Langa: this is how tajarin are born, after hours of patient work, the pasta traditionally made, rolled out and cut by hand. The preparation is long, with the dough rolled out ever finer until it reaches the desired thickness; before being cut, the tajarin must be left to dry for at least half an hour so that they do not stick.

In this dish, we offer them accompanied by porcini mushroom sauce. Why are they called that? The origin of the name is controversial. Already the ancient Romans called this mushroom suillus, "pig", from which the current name derives: according to some, the name is due to its stocky and massive appearance, while for others it depends on the particular liking of the mushroom in question in the diet of pigs, fond of truffles and mushrooms.

Ingredients: Porcini mushrooms 74% (Boletus edulis and its group), tomato pulp (tomato, tomato juice, acidity corrector: citric acid), extra virgin olive oil, olive oil, salt, onion, parsley, sugar, thyme, garlic, black pepper powder.

May contain traces of EGGS, NUTS, MILK, FISH, CELERY.

Peasant wisdom teaches us that there can only be one cock in the henhouse, which is why it was already common practice in ancient Greek times to castrate male chickens. With the added advantage that the capon, castrated at a young age,
retains a more tender and delicious meat. Made famous in Italian literature by Manzoni in I Promessi Sposi (The Betrothed) when the protagonist Renzo brings four live capons as a gift to Azzeccagarbugli, over the centuries it has carved out a place for itself in peasant
culture as a prestigious gift and as a succulent dish.
Boiled, its flesh is removed from the bones and cooked in jars in oil. To enhance its flavour in our salad, nothing beats the taste of the Piedmontese Black Truffle, a delicacy of the subsoil, still today the result of the work of the "trifolao", accompanied in their search by their faithful tabui, the truffle dogs.

Fresh in summer, in winter in jars, for a spoon dessert that combines them with amaretto, dark chocolate and cocoa: peaches are one of the most popular fruits of the Roero, and are also the protagonists of a fair held in July in the town of Canale.

Originating in China, this fruit is at the centre of countless legends, such as the myth of its power to make you immortal. As the name of this biscuit (and of the liqueur of the same name, the basis of this preparation) suggests, the bitter sensation comes from the use of almonds and armellinas, the seeds inside the peach stones.

The origin of this delicacy, a reinterpretation of the traditional 'persi pien', is to be found in the countryside, with the recipe handed down from grandmother to daughter, originally as a fitting end to the August bank holiday meal, at the height of summer, when peaches are at their juiciest and most fragrant.
