Bright, crunchy and sweet. Peppers are a much-loved vegetable in peasant cuisine and find their home in Piedmont in the Carmagnola area. Its intense flavour and bright colours are forged by the hot, sunny summers, so much so that Leonardo Da Vinci used dried and crushed peppers for the colours of his frescoes.

The sun that accompanies it when it ripens enriches it with magnesium, calcium, iron, potassium, beta-carotene and, above all, vitamin C. This precious element for our organism was isolated for the first time by the Hungarian scientist Albert Szent-Györgyi when he analysed peppers and was awarded the Nobel Prize for this discovery in 1937.

Anchovies and tuna are excellent complements to peppers, both as an appetiser and as a side dish. The latter is the only warm-blooded fish and is a very skilful swimmer: it can even reach speeds of 80 km/h.

Anchovies were much slower to arrive in the Langhe from the Ligurian sea and neighbouring France: in fact, Piedmontese merchants went to lower Provence in search of salt and anchovies at the mouth of the Rhone.

May contain traces of: NUTS, EGGS, MILK and CEDAR.

 

Storage: Store in a cool, dry place. Store in the fridge after opening and use within 3 days.
