In the rolling hills of the Langhe, as you go up in altitude, the vineyards give way to the IGP Piedmont Hazelnut (traditionally known as "Tonda Gentile delle Langhe", one of the best in the world for flavour and organoleptic qualities). With eggs, butter and sugar it is the main ingredient of our cake, typical of the autumn and winter seasons: crumbly and dry, it is at its best when accompanied by our zabajone, as well as by a good glass of Moscato d'Asti.

The recipe for zabajone dates back to the 16th century, when - according to legend - the Spaniard Fra Pasquale de Baylon, in a convent of Franciscan friars in Turin, first recommended this sweet cream made with sugar, eggs and Marsala wine to Savoy women as a remedy to restore vigor to lazy husbands. In 1722, in his honour, the sweet cream with miraculous energizing and aphrodisiac properties was baptized Crema di San Baylon, then "Sanbayon", which gives its name to today's zabajone.

Ingredients: Sugar, eggs, butter, wheat flour, potato starch, glucose - fructose syrup, raising agent (E450i, E500ii), flavouring, preservative: potassium sorbite, salt.

2. Zabajone

Ingredients: Muscat grape must 71% (contains SULPHITES), sugar, egg yolk, BREAD (BREAD, stabilizer: carrageenan), stabilizer: xanthan gum, thickener: guar flour, Bourbon vanilla, zabajone flavor 0.01% (flavor, invert sugar, sweetener: glycerin). May contain traces of NUTS, FISH and CEDAR.

Storage: Store in a cool, dry place. After opening store in the refrigerator and consume within 3 days.
