Location: Novello (Cuneo). Position: Altitude 300 m. above sea level, south-west exposure. Soil: calcareous marl with layers of sand.
Grape
Vine: Dolcetto 100%, manual harvesting with selection of the bunches. Pruning: Guyot. Density: 4,400 vines per hectare.
Wine
Vinification: soft pressing with destemming; fermentation at controlled temperature with maceration on the skins for 5-6 days; ageing in stainless steel tanks until bottling; brief refining in the bottle. Color: ruby red with violet reflections Bouquet: fresh and vinous bouquet Taste: dry taste, with moderate acidity, slightly almondy.
Serving
Serve at a temperature of 16-18 °C in a tulip-shaped glass.

Cold cuts, agnolotti al plin butter and sage, white meats, soft or semi-hard cheeses.
